Lunch idea - rice with avocado and cucumber

Today, I share a simple but very tasty and fresh lunch idea with you which also contains a lot of different vitamins to stay healthy during these days. #quarantinelifestyle
This is what you need:
- 150-200gr rice (I recommend wild rice)
- 1 avocado
- 1/2 cucumber
- salt and pepper
- 1/4 lime
The recipe in 9 steps:
Start with cooking the rice (depending on your chosen type of rice, cook the rice for 15 up to 20 minutes).
While the rice is cooking, cut the avocado into cubes.
Cut the cucumber into cubes.
Mix the cutted avocado, cucumber, salt and pepper in a bowle.
Add a spoon of balsamic vinegar.
Squeeze the quarter of the lime above.
Pour the rice.
Arrange the avocado-cucumber mixture on top of the rice and add some cocktail sauce. Enjoy!
The rice with avocado and cucumber works also as a perfect side dish for roasted salmon, tofu or shrimps.
